  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small red onion, grated
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh mint, chopped
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp lemon juice
  • 1 garlic clove, minced (for tzatziki)
  • 1 tbsp fresh dill, chopped
  • 1 tbsp olive oil (for tzatziki)
  • Salt to taste

Instructions

  1. In a bowl, combine breadcrumbs and milk. Let sit for 5 minutes.
  2. Add ground chicken, grated onion, garlic, herbs, lemon zest, salt, and pepper. Mix gently.
  3. Form into small meatballs and place on a tray.
  4. Heat olive oil in a skillet. Cook meatballs until browned and cooked through, about 10-12 minutes.
  5. Grate cucumber, salt it, let drain, then squeeze out moisture.
  6. Mix Greek yogurt, lemon juice, garlic, dill, cucumber, olive oil, and salt in a bowl. Chill for 30 minutes.
  7. Serve meatballs with tzatziki on the side.
